There is simply no better way to cut the cheese than with a cheese guillotine - a cheese slicer. We like to use interestingly figured woods for ours, such as spalted tamarind (shown here). Spalting is nature’s example of turning lemons into lemonade. Water seeps into cracks, causing rot and leaving patterns that many (including us!) find beautiful. Cheese slicers are an easier way to do it than with knives, and they’re especially great when company is around.
